Pasta Bake

Ingredients

  • 2 tbs oil
  • 4 large onions, chopped
  • 500g short-cut bacon, chopped
  • 1kg pasta – Penne or Rigatoni or Spirals
  • 2 x 575g jars of Leggo’s Pasta Bake ‘Creamy Tomato & Mozzarella’ flavour
  • 1kg Frozen Carrots, Peas & Corn
  • 500g Frozen Corn
  • 410g can of Crushed Tomatoes
  • Seasoning – salt, pepper and Vegeta or Herbamare (see O’s Tips, below)
  • 1 – 2 cups grated Mozzarella cheese

Method

  • Bring a large pot of water to boil. Add a dash of oil and a pinch of salt. When the water has boiled, cook the pasta to packet directions. Do not overcook..
  • While the water is boiling, in a very large non-stick frying pan or saucepan, saute onion in the oil until transparent (10mins) then add the bacon and saute until cooked, another 10-15mins
  • Add the frozen corn, frozen mixed vegetables and crushed tomatoes and cook, stirring regularly until the veggies are cooked
  • When the pasta is cooked, drain it and add the 2 jars of pasta bake sauce, stir through well to coat the pasta
  • Then add the cooked veggies and stir through to combine
  • Pour the pasta mixture into an oiled baking dish and sprinkle with the grated cheese
  • Bake in a hot oven until the cheese is melted and the top of the pasta is beginning to go a bit crispy – around 30-40 mins

-> ‘Herbamare’ is a seasoning made with sea salt and organic herbs and vegetables. It is MSG and preservative free and can be found in the health care section at the supermarket
