Ingredients

- 1.5kg Black Mussels
- 1 bunch celery, trimmed and chopped
- 4 carrots, diced
- 5 large onions, chopped
- 1 large parsnip, chopped
- 3 x 420gm cans chopped tomatoes
- 3 tablespoons tomato paste
- 1 bottle dry white wine (yes.. 1 bottle!)
- 1 whole chilli, chopped (or to taste)
- 8 cloves garlic, chopped
- Water
- 1 bunch parsley
